Cauliflower Rice w/ Onion & Celery

1. In a large skillet, heat olive oil over medium heat

2. Saute onion over medium heat for 10 minutes, until soft

3. Add celery to skillet and saute for 5 minutes

4. Meanwhile, place cauliflower in a food processor with the “S” blade and process until the texture of rice

5. Add cauliflower to skillet, cover and cook 5-10 minutes, until soft, then add salt

    I paired this with some tofu for dinner. It was super tasty! I actually prefered it to regular old fried rice. This was the majority of my dish, so I’m only getting two serving out of it, but I’ll definitely be making more soon. 🙂

    I’m not sure about the calorie count, but it makes about 2-4 servings depending on your serving size.

    I just made this (added some red pepper too) and put it with the sweet potato fries that you wrote about. Was soooo good! This made about two portions for me but I was having it as a main dish rather than a side (: I shall be having the left overs for lunch tomorrow and think I might live off this dish for a while, so guilt free and tasty!
