What my shopping cart looks like!

I went shopping this weekend to experiment some vegan recipes in preparation for your Vegan Week beginning May 28th! That’s next Monday! We’re gonna me making lots of yummy things like eggplant bacon, apple sweet potato mash, hummus, zucchini pasta – ahh I can’t wait!! Can you see the excitement in my eyes in this video? I’m like about to POP out of your screen and shake you and ask you to join in for Vegan Week with me!!!!

For those of you that are new, Vegan Week is a personal challenge for me too – just trying to cut out all dairy, meat, fish, poultry, and eggs for 2 weeks. My high animal protein diet that I did for the bikini comp killed my insides so I need to try something new. So far, after testing out recipes for the past few days, my stomach and digestive system have been VERY happy. Also the increase in carbs with the fruits I get to eat makes me sooooooo satisfied. I appreciate fruit and flavor so much.

You are in no way obligated to do the full challenge with me, but I will have a full 2 week meal plan up by the end of the this week. I encourage you to test yourself and try 1 week, 1 day, or 1 meal! Even as an experiment and as an opportunity to push yourself out of your comfort zone. It will be good for your body, mind, and spirit. Afterall, when is a better time to do this? The Blogilates Community will be here to do it with you!

    I love vegan food-I’ll never give up meat or animal products altogether, but I am happy to go a couple of days or even weeks without them and not notice. This looks SOOO yummy-I’m excited to try it

    I just love your blog Cassey! You’re such a big inspiration to me for becoming healthy and strong.
    I did a Vegan challenge once and everyone in school thought I was crazy xD I didn’t miss the animal products at all and I’m definitely going to do the Vegan challenge with you. 🙂
    Have you heard of the book Vegan Cooking for Carnivores? I heard it’s really good, plus it’s by Ellen DeGeneres’ cook so it can’t be too bad. 😀

    I’m totally doing this vegan challenge. I’m a huge sweets freak and a healthy meal plan I think will help 🙂

    On the sweet-y note: I’ve been chopping and freezing a lot of fruits lately, something I’ve found to be muy delicious is frozen banana and mango put into the blender, it makes a kind of creamy icy sorbet sort of thing. YUMS.

    I am so jealous at how delicious those strawberries look. The ones in supermarkets here in Australia are already going bad the day they’re put on the shelves. Not to mention at the moment they’re $6.98 for 250g (8oz).

    I did a vegan challenge last October and never stopped. Don’t plan to either! But a vegan diet is about more than just not eating meat, dairy and eggs. It’s no animal products at all! That includes certain dyes, honey and many many other ingredients like carmine or gelatin. There is a great list here http://www.veganwolf.com/animal_ingredients.htm Even many sugars (non organic) use bone char…crushed bones!

  9. I did a Vegan challenge for the whole month of March and absolutely loved it. I have recently stopped but would love to get back into eating a more balanced plant based diet!

    I am excited to see these recipes! I am not a huge meat fan but I get so overwhelmed by the vegan life, so I am excited to learn more. Also, you are adorable. I literally laughed out loud when you said that book was totally legit because there was a doctor on the front.

    Hi! I would love to see your recipes for things like quinoa (which I’ve never actually eaten), but I’m so excited to do the vegan week challenge! I’ve been doing a really clean diet for the past week with tons of veggies and fruits and less protein (no eating out, nothing loaded with preservatives), but am running out of ideas for recipes! Are you planning on making anything with kale? I hear it’s supposed to be really good for you, but again I havent made anything with it haha. Looking forward to seeing your recipes!

    Good Morning Cassey

    I treated myself to a few items from your shop, thank you very much..i’ve been on a plateau for quite a while…reading your interview with Nicky Inspired me, I “was a teenage athlete” and am at a low at the moment…you’re really inspiring & i loved seeing pix of your mom & dad at the bikini comp, they are so rightly proud of you. I have 2 kids & i can imagine how they feel.

    Anyway I have been doing a lot of veggie based eating and one of my faves is using quinoa as a base…what i will be doing for a few memorial day potlucks is quinoa with mango, black beans, hot sesame oil and some other goodies, if you google those ingredients you will find great recipes 🙂

    For vegan tips i have found thus far, spices are everything, smoked paprika is da bomb, and many vegans i know are into “Bragg’s Liquid Aminos”, which is a zero calorie flavor booster in lieu of soy sauce or marinades, etc. I saw nicky used ezekials bread to make croutons. Huzzah!!!!! I am going to start doing that!!! great way to get your whole grains in, in a plant based diet 🙂

    Great idea, this vegan week!!

    But why do you need so many plastic bags in your cart?? The veggies have been touched by loads of hands anyway, so you could just put them in the cart, get them weighed, then put them all in one bag?!

    Sure, if you don’t take the bags, someone else will, but I believe in exemplary function and there is _WAY TOO MUCH_ usage of plastic!!?!

    Dr. Neal Barnard! He wrote the cookbook, haha. I saw him speak at my University and he was AMAZING! He works for Physicians Committee for Responsible Medicine. I’m so excited to try out the recipes you pick 🙂 I have two of those books! You should try tofu scramble 🙂 You can mix in tomatoes, spinach, mushrooms, whatever you like! It’s delicious!!!!!

    I would love to see a vegan protein pancake ! I tried the TIU version with tofu and it wasn’t as good as their egg based one in terms of texture

    I’m super excited for your meal plan! I am a vegan, but I could use a diet reboot. I think I eat too much oil and not enough fruit. I love to cook and bake so while being creative I tend to go overboard with foods that aren’t super high in nutrients. That is all good in moderation but I’d really like to up my fruits and veggies! Cassey I’m so glad you’re spreading the vegan diet. People need to see that it’s normal and healthy. Much love!
