High Protein Yogurt Oatcakes

So here’s my little cooking video on the high protein yogurt oatcakes. They turned out super tasty and gave me tons of energy for my workout today. At only 136 calories a serving, this satiating meal was heaven sent. Protein to help build lean muscle mass and carbs for energy. Will definitely make them again!

High Protein Yogurt Oatcakes

Makes four servings of three pancakes (3-4”)

Ingredients:

– 1 cup instant, one-minute, old fashioned, or steel cut Quaker oats*

– 6 egg whites

– 1 cup fat-free Greek Style yogurt

– 1/4 tsp vanilla extract

– 1/4 tsp ground cinnamon

– 1T agave nectar, honey, maple syrup or sugar

– 1/2 tsp baking powder

Calories – 136 
Fat – 12 calories, 2g
Fiber – 1g
Protein – 11g
Carbs – 21g
Sugars – 9g

Directions:

  1. Put all the ingredients in a blender and puree.
  2. Coat a hot pancake griddle or frying pan with a little butter, oil or a non-stick spray.
  3. Pour approximate 1/4 cup of batter to make a 3-4” pancake. Flip over once the batter starts to bubble.

*Quaker Oats are the same nutritionally. They roll the oats thinner to make them faster cooking. So steel cut isn’t better than old fashioned or instant.

Each pancake is one Weight Watcher POINT.

    I just made these to heat up in the morning and OMG these are way better than those artificial boxed mix pancackes! I am so happy I made these. They looked like they were going to be thin at first but then they puffed right up. Thank you Cassey!

    Thanks for a great recipe. I spread mine with a tiny bit of brushed on butter flavored olive oil and a teaspoon of raspberry all fruit with fiber spread. Really delicious wit no guilt.

    OMG these r soooo good!!! I made them for my family (and we eat sugar all the time!!… I really need to start eating clean…) and everyone loved them! I followed the video (the recipes are different) and it is awesome! Tastes just like a normal pancake!! Btw I’m so impressed by the flip at the end of the vid. I’m totally going to make more and freeze them so I can have them whenever!! Thank you sooo much!!!

    Hi Cassey!

    I just made these and tried them for the first time this morning and LOVED them! I used 6 oz. yogurt instead of a full cup so I had to adjust all the other amounts in the recipe but everything worked out just as well. But boy, do these fill you up – I could barely get through two pancakes! They go really well with natural peanut butter (I use Smucker’s crunchy natural peanut butter) or honey. But thanks so much for sharing. I went for a 5-mile run afterward and had so much energy – it was one of my best runs this summer!

    Keep posting recipes and ideas; you’ve truly been such an inspiration. I have been working with a trainer at my gym and showed her your videos a few months ago and she is VERY impressed!     I just made these for my pre-workout breakfast! AMAZING. I am so in love. Everyone has to tries these babies out.

    When I was adding the oatmeal, I was kind of surprised about how much oatmeal was going in, and after blending all the ingredients together, I realized I couldn’t of been far from wrong. The mixed seemed a little too liquidly, so I added just a bit more oatmeal and it was perfect.

    I tried these and my batter came out SO thin. They were more like crepes than pancakes. :/

      That’s what I thought initially too, after I blended the batter. But when you spoon it into the pan, the pancakes turn out thick!
