Healthy Doritos (yes for real!)

How is your weekend going so far? My sister just left today (sadness!) but at least she left you a little token of torture that you will get to experience on Thursday for your new video! There is a move that literally left my inner thighs SPAZZING for a whole minute. Yup. It’ll be cray!
Here we are at Diddy Riese in Westwood eating our YOLO meal for the week! I got a peanut butter and oatmeal raisin vanilla ice cream cookie sandwich! I believe Jackelyn got whote chocolate macadamia nut and chocolate chip with vanilla inside. These cookie sandwiches are amazing! Only $1.75! I went to Sprinkles Ice Cream in Beverly Hills a few weeks ago and can you believe they sell the same thing for like $8??? It’s ridiculous!
You know what we should do? Let’s healthify it!!
Why don’t you make my 2 ingredient cookies and then sandwich the peanut butter banana ice cream inside? Holy canoli! That’s a really good idea!!! GO FOR IT!!! Please tweet me a pic when you make it! AHHH! My mouth is now watering for this!
Oh so anyway, you are probably wondering about the “Healthy Doritos” I mentioned in the title. I’m actually alluding to Kale Chips! I just got my dehydrator and wanted to give it a whirl IMMEDIATELY! I bought kale chips at Whole Foods the other day and it was like $5.99 for a teeny weeny bag of leaves. They were amazing, but expensive. So I looked up a recipe on thekitchn.com and was shocked at the success of the recipe! Almost cried tears of culinary joy.
Let’s see how I made it:
Cheesy Doritos Kale Chips
Serves 2 to 4 for snacking
3/4 cup soaked sunflower seeds (you could also use cashews. soak your nuts in water for about an hour)
1 bunch kale, washed and dried
1/2 red bell pepper, stem and seeds removed, chopped into large pieces
1 clove garlic, peeled
1 tablespoon soy sauce
2 tablespoons extra virgin olive oil
1/3 cup nutritional yeast (got mine at Whole Foods – it was $14.99 for a little tub)
1 lemon, peeled, cut into wedges, and de-seeded
First, blend up all of your ingredients! Then mix them in with the kale in a large bowl. Make sure every leaf is covered with love!
If you have a dehydrator (I have the Nesco 700 watt), place the leaves on the trays and make sure they are not touching each other. If you only have an oven, then lay the leaves on a baking sheet on a pan.
So pretty!
Set the dehydrator to about 135-145F for a 2-3 hours or until crunchy and not wilty. For oven people, turn up to heat to 350F and bake for 5 min. Then toss and bake for another 5. You need to be careful! These can burn very very easily.
Then after all of that work…this amazingness comes out!!!!!
The flavor was OUT OF THIS WORLD!!!! It really tasted like Doritos and Jackelyn and I gobbled it up like monsters after our workout. I let her take the rest of the batch home on the plane but no worries…headed to Trader Joes immediately and got more kale 🙂
Give it a try guys! I know you will really love it. Next time I wanna try honey mustard flavor…oh and how about Hot Cheetos or Sriracha flavored kale chips!!??? That would be ridiculous. Okay, I am on it. It’s my next mission.

I was so excited about trying this recipe and unfortunately it didn’t really work out for me. They came out crispy but the taste wasn’t what I had hoped. Maybe the lemon was too much combined with the bitterness of kale. Oh well, on to the next recipe 🙂
i tried these and they were soooo good! i bought two small bags at the Fresh Market and they were about 6 dollars a bag. making them myself is definitely more inexpensive. I baked mine in an oven for two hours at 170 degrees so they wouldn’t burn, and they were perfect!
PLEASE PLEASE PLEASE DO HOT CHEETOS FLAVORED! you could be my saver !! Omg ! Am addicted to hot cheerios and eat them every single day no kidding… I try to stop but it fails every time!! But if I find an alternative in healthy version?? OMGGG! PLEASE you gotta do this for me ! Loll yes am that desperate for hot cheetos!
I thought I put mine in long enought but I didnt… first time ever making Kale Chips.. they seemed crispy so I turned off the dehydrator. … Im going to attempt to lay them out and turn it on again tonight.. not sure if that will work.
As for taste I will say they are good!! Would recommend.
I Wanted to try making these SO much today and went to the shops to buy the ingredients but I accidently got Dry yeast rather then Nutritional yeast :'( (I’m such an Idiot! >.<') Oh wellz…..Ill try again later….
These are delish! So DELISH in fact, that my friends are paying me to make these crunchy savory treats. This weekend I have 3 orders. I spice it up for some by adding cayenne or habanero depending on the spice level my each person can handle.

anybody know if the dehydrator cassey has is any good?
I’ve been using a similar model by the same brand, and it works nicely. I don’t have to rotate trays. It takes about 3 hours to dry completely.
I have this same dehydrator and love it I have made jerky, squash, bananas, today apples and zuccinni (sp)
I couldn’t get this to work for me in the oven :/
It was burnt on the edges but soggy everywhere else. Tasted pretty good though.
Did you try them in the oven using a dehydration technique or baked? I really, really want to try these too- this is my favorite combination of ingredients I’ve seen for kale chip recipes yet. But I only have an oven. I was thinking about trying it “dehydration style”, on a low 100-something temp with a fan and the oven open. But maybe if they turned out soggy, I could try baking them around instead (raw isn’t necessary for me)?
Please, any ideas/suggestions from anyone would be wonderful!

What does the nutritional yeast do? Can it be ommited or something substituted for it if I can’t find it? They look delicious and I can’t wait to try them!
I think it replaces cheese but I could be wrong. I don’t have access to it either so I may use a little parmesan.

Nutritional Yeast can give your food a cheesy-ish flavor.
I got mine on Amazon for around $7 – $8 a bottle.

Love that you guys do one “bad” meal a week! Never giving into your cravings is such a recipe for disaster, completely unsustainable.
I totally agree! It’s not healthy for you either, not to give in once in a while..It actually makes you stressed..I shoot for once a month for restaurants and try my hardest for once weekly treats! 🙂

Ohhh man, I want to try these! I want to get a dehydrator, too! I have been thinking about them recently because my mom used to have one and dried fruit and you are seriously the first person I have seen to have one since then! Good to know those machines are still out there and easy to find. : )

If you could figure out the flaming hot Cheetos kale chips I would love you forever… Okay I already love you forever… but seriously I was just telling my sister the other day that I have a healthy alternative recipe for every food I love EXCEPT flaming hot Cheetos. I just wish I had a dehydrator. Looks like I’m gonna have to start saving up 🙂
When you say “blend the ingredients” in the recipe, do you mean to put them in a blender? The picture looks like the mixture had chunks of the pepper and nuts, so I just want to be clear.

The point is to create a paste to cover the Kale with, so using a blender or food processor should work.

We should definitely try the Flaming Hot Cheetos! That would be fantastic, though I’d be quite happy with Sriracha flavored as well…I can’t wait to try this!
I bought something like this at Trader Joes and they were so gross, had a really horrible after taste, so I imagine homemade ones would be better!

Are you going to be getting the Beverly now tie gym bag in pink anytime soon? I’ve been holding back on buying it for about 6months so that I could ask for it as my birthday present, but now that its finally close to my birthday I can’t find it in pink in the ogorgeous store 🙁
lol that is not Doritos. Just say what it is which is another type of kale chip. Just like banana ‘pancakes’ is not pancakes.
Well, if you think about it, Cassey is simply leaving out a word. She could easily say Dorito-style or Dorito-flavored Kale Chips or pancake-esque fried bananas. Her way of saying things gets her point across much better.
Uhm..if you don’t have something nice to say, please don’t say it 🙂 thanks…we all love the positive atmosphere here and don’t need any downers! 🙂 ….And Doritos and pancakes are not healthy…..so these are our healthy alternatives so we don’t eat CRAP 🙂

Kale has a very overwhelming bitter taste to me. I have tried the Kale Chips before and I just can not get past that bitterness.

If the kale is fresh, it will have a sweet flavor and crisp leaves at the tips. You should also be sure to check that the kale is bright green from root to tip. Try again, and I promise you will enjoy kale’s sweet, natural taste. I daily use kale – uncooked – in my salad.
Being British one of my favourite things is Salt and Vinegar flavour crisps – if you can come up with a decent tasting kale version you would make my year! I’ve tried on non-potato products before but it just tastes like salad dressing which, whilst nice, just isn’t the same – I challenge you, Cassey!
Oh. My. God! I love you for this! I love my doritos but yes I have been dreaming forever of a healthy alternative. Can’t wait to try these 🙂
