Green Muffin Madness!
Happy St. Paddy’s Day POPsters!
Are you wearing green? If not, I’ve gotcha covered…because if you’re eating green, you are good. I just came up with a super easy and ultra healthy muffin recipe for you! As you know, I always like to keep it pretty simple (who has time!?) and this recipe is no exception! Ready for it? First take a look…and imagine a sniff!
Oh yes oh yes oh yes! That’s pistachio topped oat flour muffins! Here’s the recipe:
INGREDIENTS:
– 1 banana
– 1 cup oat flour (take dry oats and blend them up until they become flour)
– 1 egg
– 1 TSP nonfat plain greek yogurt
– 1 Cup spinach
– 1 tsp cinnamon
– 1/8 to 1/4 cup Stevia
– 1 TSP of crushed Pistachios
DIRECTIONS:
Mix it all up in a food processor or blender (except for the pistachios), then pour into a muffin tin sprayed lightly with oil. You may add fruit chunks if you’d like. I added whole blueberries. Then top with the nuts. Bake for 10-15 min at 350F. Easy!

While I was waiting for the muffins to bake, I poured the same batter onto my dear waffle maker and this gorgeous beauty came out. It was DELISH!!!
I was soooo excited for the muffins to finish…and when I heard the ding, I couldn’t have asked for more! My heart shaped muffin tin made them so cute 🙂
Finally after instagramming…tweeting…and facebooking…I was like OMG please let me eat this. It was so worth the wait. For those of you worried about the spinach, no worries, you can’t even taste it. All it does is give you that gorgeous green color and a ton of nutrients (it’s an excellent source of vitamin K, vitamin A, magnesium, folate, manganese, iron, calcium, vitamin C, vitamin B2, potassium, and vitamin B6). So…eat up!
These muffins are great as a breakfast treat or an hour before working out. Will give you lots of good carb energy to go hard. I hope you give this recipe a try. I’d love to see pics and what other green concoctions you come up with! Please share with me on Instagram #blogilates!

Today (Sunday) I am getting my hair did! I am so excited.
I am going to go for the whole ombre look as you can see here on Mila Kunis! I will try to keep as much of my length as possible, but I have major split ends so I think at least 2 inches will be chopped off. I was fortunate to read up on some very positive Yelp reviews on hair artist Guy Tang and got in touch with him immediately! We’re gonna do a lil makeover video so you can see the transformation. I’m super excited! So watch out for that!! Will be instagramming the 6 hour process. Yes. 6 HOURS!!!! Guy and I will be BFF after this hair appointment I am sure 🙂

Just a tip… If you are planning on doubling the recipe make it in two batches! I just tried doubling all the ingredients and mixing it together and my poor little blender couldn’t handle it! It started to smoke and my mixture did not get blended properly.

Try using coconut yoghurt or any non-dairy yoghurt, worked well for me!
can i use egg replacer instead of an egg? would the final result be just like the egg one?

Just tried this… Oh my gosh delicious!!! I used two egg whites instead of one whole egg and worked perfectly 🙂 also adding the blueberries really gives them that sweetness! Thanks for sharing, will be making these again for sure!

How many muffins do these make?
Hi! I made these today, and they made six regular-sized muffins. The same size that is generally used for cupcakes, since i used cupcake tins.
So good! I used honey instead of Stevia and walnuts instead of pistacios (b/c those were wut i had in my pantry) and added both whole blueberries and dried cranberries. Delicious!
what can i use intead of stevia?
agave nectar or honey perhaps
You can also use regular sugar! I didn’t have stevia on hand, so that’s what I used and they turned out great 🙂
How many calories are in a muffin? (:
Hi Mel – if we assume that the batter makes about 6-8 muffins, it’s about 100 calories per muffin, I think. Not bad at all! 🙂
Can you taste the banana, because I don’t like bananas. Or is it possible to make them without a banana? 🙂

These are sooo good! I added a pinch of natural salt to make it even sweeter (weird the way that works right??). I also substituted kale in for the spinach because i was out but it’s all good! So thank you for the recipe!

I used almonds instead of pistachios as I had them in my cubby, and they do the justice just as well 🙂
I used 1/4 of a cup of stevia, kinda on the higher range of what she posted — the stevia gives a nice after taste that complements the banana 🙂
YOU DO NOT TASTE THE SPINACH WHATSOEVER.

So delicious!! I added some protein powder about 2 oz or 6 tablespoons, i don’t know how that translates to scoops because I use the Natural Grocers protein powder since it is one of the few that didn’t have fake sugar (I’m so allergic to it) or anything else fake in it. Since my bananas are a bit small i had two in the mix, and when that seemed a bit too liquidy I added a tablespoon of flax. Also, since I’m at high altitude, I added 1 teaspoon of baking powder and 1/4 teaspoon of salt. I found this really helps at high altitude, otherwise my muffins just come out like little hockey pucks.
LOVED the pistachios on top!!!! These were the perfect little on the go snack after my workout.

I made these last night after I saw you post it, since I had all the ingredients on hand. I kinda like them! They tasted more spinach-y than banana-y, probably because I used (a lot of) frozen spinach.

These were sooooo yummy! Made them a couple hours ago. I actually used CARROTS instead of spinach! I know, it sounds weird, but I didn’t have any spinach on hand, so I just chopped up some carrots and threw them in the food processor. Thanks for the recipe!

just made the muffins….i used 1/4 cup regular brown sugar and added a tbsp applesauce for extra moisture and sweetness. They are really filling and delicious! thanks for this great recipe! also, i have a question: do you still cook with miracle noodles? I ordered some a while back and once i opened the package I could not get over that fishy smell…anyway, thanks for your great contribution to the blogosphere!
Oh! You must wash them first!! Rinse them thoroughly under running water. Then cook 🙂
