Easy, Quick & Healthy Breakfast Ideas!

It’s time for another #CHEAPCLEANEATS! I am on a roll! You said you love the cooking vids so I am doing my best to do even more 🙂 Also guys, you will notice in the video that I have a new kitchen. Most of the ingredients I got from THRIVE Market, which is basically like Costco and Whole Foods combined. I saved like 25-50% on my food! That’s amazing because normally brands like Justin’s Peanut Butter and Bob’s Red Mill can get costly.

PANCAKE KABOBS

Ingredients for coconut paleo pancakes

(makes 36 mini baby 1.5″ pancakes) 4 eggs 1 cup almond milk 1-2 TBSP vanilla extract 1 TBSP honey or agave nectar 1/2 cup coconut flour pinch of salt 1 tsp baking powder

Method: 1. Mix all ingredients to make pancake batter. 2. Put pan on medium low and spray it with coconut oil. 3. Pour batter to make mini baby pancakes. Let pancakes cook for about 30 seconds or until little bubbles start forming, then flip. Batter will make about 36 pancakes. 4. Slice banana into coins and spread almond butter on top of each slice. You can slice your strawberries too. 5. Put pancakes, strawberries, bananas, and blueberries on skewers one by one. Make sure to alternate colors to make it pretty!

Nutrition (1 kabob): 122 calories 6g fat 13g carbs 4g protein

BANANA POPS

Ingredients: 2 TBSP paleonola or granola 1 banana 2 TBSP peanut butter

Method: 1. Slice banana in half. 2. Place popsicle stick in end of banana. 3. Slather banana in peanut butter. 4. Roll banana in the granola.

Nutrition (1 pop or 1/2 banana): 186 calories 12g fat 18g carbs 6g protein

BERRY CRUNCH OATMEAL

Ingredients: 1 cup quick cook dry oats 2 tbsp dried cranberries Few raspberries 2 cups hot water 2 tbsp honey Greek yogurt 1 tbsp pistachios Honey or agave (for extra sweetness)

Method: 1. Combine oats and dried cranberries in a bowl with hot water. Stir together. They will cook in the bowl. 2. Put a dollop of Greek yogurt on top. 3. Top with pistachios, raspberries, and honey.

Nutrition: 435 calories 15g fat 66g carbs 14g protein

    I was super hungry and since I tried the 8 week hot body plan for only a week and a half and saw results in my hair and my skin and my body, I knew exactly where to go when it comes down to food! I guarantee it will be healthy and yummy!

    I tried making the pancake kabob and they seem very heavy and not lite and fluffy like hers looked in the video, I am very disappointed because I feel like I just wasted food that I could have used for something else. Did I do something wrong and did anyone else have this problem?

    I think I shall start doing blogilates again since two weeks ago my gym changed completly. I now feel so exposed there. The new ab “room” is very small (maybe five mats directly next to each other can be placed there) and around you are all people watching. I can’t really do blogilates-ab-moves there anymore because the guys keep staring at me and I don’t feel comfortable. My father today told me that some of my yoga moves or stretching are a inadequate in this place. So no ab workout or stretching there. Great. Next part I feel terrible is the new dumbbell spot. It is now exposed as well and you can see the whole room in the mirror plus several manly people just starring at your ass while you do your bizep moves. I am not a girl that has 100% self-esteem so I feel watched, embarressed and simply uncomfortable.
    I don’t have much space at home either, but at least I won’t feel like people take off my clothes with their eyes.

    I tried the pancakes but couldn’t get the batter quite right, I wasn’t able to flip them as they were too runny. Anyone help?? So sad cause they would be so delicious!!!!

      I made the pancakes also but mine were to heavy and they didn’t taste that good. Maybe it’s the coconut flour I’m not sure but I was not happy with the way they turned out.

    You are so great!! Such an inspiration!! …can I just say that I LOVE That you made these clean eats cheap! Eating healthy is easy when you stop by Whole Foods… but spending an ‘arm and a leg’ on nourishing eats is NOT the only way to go! You prove that eating well doesn’t have to be overly pricy! Thanks so much for all you do!
