Blueberry Banana Protein Pancake!
– 1 egg
– 1 scoop vanilla protein powder
– 1 tbs ground flax seed
– 1 ripened banana – mashed up!
– 1/2 cup fresh blueberries
– 1/2 tbs organic vanilla soymilk
Mix it all up! Fry with a tiny bit of EVOO. Then top with pretty strawberries!
Total protein content? Over 27g! 250-300 cals depending on how much fruit you use. I made 4 pretty good sized pancakes.

YUM! I mixed this recipe with the Apple Cinnamon Protein Pancake! (Out of necessity cuz I didn’t have flax seed… and I didn’t have apples, lol!)
Came out suuuper good, and no mush, no problems flipping at all (just like cooking any regular ol’ pancake!) and my sister who isn’t into the eating healthy thing tried it and said it was good! WOOP! WOOP!
What I did:
1 whole egg
1 Egg white (Total of 2 egg whites, I separated the white from the whole egg and added to this.)
1 mashed banana
1.2 tbs almond milk
A little more than a 1/4 cup of oatmeal. (Blended to make it like powder)
1 Scoop of Vanilla Protein Powder
Dash of cinnamon
With an electric mixer beat the egg whites till very fluffy. (I had to do this by hand since I couldn’t find ours, lol. HARD WORK, lemme tell ya.So yes, electric mixer= MUCH BETTER.)
I mixed all the liquids first along with the mashed banana, then added the dry mix (oatmeal, powder and cinnamon)
At first I had the flame on higher, but what happens is that the top gets crunchy but the middle stays kinda mushy, so I lowered the flame and it all cooked evenly. Surprisingly, the more it cooks, the better it tastes. Well, for me anyway. 😀
YES, it will take some patience, but hey! Gives you time to wash the dishes! heheh

These turned out INCREDIBLE. The trick is definitely mashing the banana well and whipping up those egg whites (I did egg white and egg combined) and as Cassy said, mixing ingredients well. Mine turned out like the picture but I chose to do this recipe because I had no protein powder or blueberries. I have found my new favorite breakfast! Thanks so much for sharing!
Oh! And excellent advice on having that flame not too hot. I greased my pan with a bit of coconut oil and used lite coconut milk instead of almond because that’s what I had. (: thanks again!

I wish I read these comments before I attempted to make them. I made the banana protein pancakes and they came out perfect but this recipe turned into utter mush. Would not hold. I think the blueberries should be held off until the end or used as a topping. 🙁 It looked so yummy too!
I made these with chopped frozen cherries and they were amazing. I seriously burnt the first one and it still tasted great lol.

Had these for breakfast, even my brother (who has no interest in eating clean) said they were good! I substituted the flax seed for coconut flour so probably a bit higher calories but tasted delicious!
I have tried these pancakes twice and had the same problems:( taste is good but mushy and cannot get them to flip so i have mush on my plate too, mine look NOTHING like yours:(!
Will the recipe still work if I don’t add any protein powder?
These were to dieeeee for. OMG. Delicious. My method was to pour the batter in the pan, THEN put the blueberries on top, cook for a bit, then fold in half like an omelette! Worked perfectly!
Hi I just looked at this and wondered if everything (inc all the blueberries, except a handful for decoration) should just go into a blender and then that will make the mix correct? Or is it only to be mixed by hand?

Blender is fine, but I mixed it by hand.
Hi, gave it a go tonight, I think I made the same mistake as the people above and wasn’t patient enough waiting to flip them. Will keep anyone else posted when I nail it!
Oh and btw the vids are great, as someone who’s given Pilates a first go, (to get better at cricket of all things) it’s a real eye-opener!

umm cassey mine came out looking nothing like yours! i think its because there were whole chunks of fruit? they didn’t come out in whole circles, just chunks in a circle form haha. they were still pretty good but i don’t know why they didn’t come out like yours! any ideas??
You need to really mash up the bananas!

Hey Cassey, I tried making your blueberry protein pancakes and they turned to mush in the pan:( I used the same recipe minus flax seed. Can you tell me how you make them without it turning to mush?? Thanks!
Hmm this really shouldn’t happen if everything is well mixed. Make sure your heat is low and that you leave the pancakes on long enough before you flip. There should be no way for them to stay mushed to the pan. Let me know if that helps.
