How is your #21DayTone challenge going?!!! I know you might be sore but just think about how STRONG you are getting. That’s always what gets me through the tough parts of any workout or journey!
Buuuuuut my legit favorite part of any journey (fitness or not) is celebrating the wins, no matter how big or small. And sometimes (okay fine, a lot of the time) I like celebrating with ice cream! If you know me, you know I LOVE ice cream like nothing else in this world. But sometimes I just want a cold and creamy treat without all the extra sugar and calories. My favorite thing lately has been to turn frozen fruit into ice cream and I must say…
IT. IS GOOOOOOOOD.
My fave recipe lately?! Mango Banana Ice Cream. The best part, it’s only 2 ingredients. Any guesses?!!!! Hahahah. It’s the perfect fruity AND healthy treat that has no added sugar but has all the sweetness you need.
Also, this recipe is 90 Day Journey friendly so it’s a double win!

2-Ingredient Mango Ice Cream
INGREDIENTS
1 ripe banana – peeled, sliced, and frozen
1/2c mango – chunks, frozen
Toppings of choice (option)
DIRECTIONS
1. Combine frozen banana and frozen manago together in a blender
2. Blend until smooth!
3. Add ice to thicken or milk of choice for a softer consistency.
4. Complete with toppings of choice and serve.

Hoping to try this! I don’t have frozen mangoes, but I have frozen strawberries… Wonder how that would taste?
That would be yummy, but a very different texture. Mango has a creaminess and consistency that’s different from strawberries
I bought some mangoes with this recipe in mind, waiting for the mangoes to ripen. Hope they are sweet. If not , I may have to wait till mango season (whenever thet is) to try again.

Did this today – great stuff! I put a little bit of vegan vanilla yogurt in the mix to make is creamy, was soooo good! I’ll experiment with the ratio of banana-mango and put more mango next time, as the banana taste was a bit too strong to feel the other flavour. Thanks Cassie!

Will totally be doing this and will share results on Insta!! I have a question about the challenge though. I know we’re meant to cut out refined carbs but as a college student, a lot of my food is stuff like dried pasta, rice, and bread because it lasts long and is filling. Could I still participate in the 21 Day Tone as long as I’m not consuming much of these refined carbs/starches?
Try to switch to brown rice or have a mixture or white and brown rice if that’s easier for you! Brown rice is a complex carb so they take longer to brake down than white rice does! That’s what I try to do when possible! And I am still doing that challenge!
hi I’m def not cassey haha but! rice is a whole food, not a refined carb so rice is great!! whole wheat pasta is less refined, and fine in moderate amounts and bread is high in calories but some breads are really healthy! some bread has a lot of added sugar, and the “healthy” ones can be quite expensive but, work with what you have for sure <3 check out highcarbhannah on youtube, she has a lot of info on calorie density in foods as well as eating whole foods, and non refined carbs and starches. just do your best, good job <3
Cassey, my dear, I would love some recommendations about blenders. I love some frozen fruit smoothie, and helps some baking recipes, but all blenders I tried died after facing ice or frozen food. Help me please 🙂

I’m trying it! Using fresh banana and mango (since I have them!) Adding a touch of Almond Milk and freezing. Will try tomorrow!

We got hit by 3 major hurricanes last year, but now we’re getting snow in January like other places! Oh, YES!! It’s already a better year! My dad got his vaccine, and oh man, was I worried about that. He’s battling terminal cancer, so we’ve had to be hyper vigilant with our COVID rules. We’ve been rocking masks before corona. Would it be okay if I substituted pineapple for mango?
As long as it’s frozen and in chunks, it’s fine. The pineapple flavor is strong so the banana won’t overpower it.
