Cheap Clean Eats is officially backkkkk!!! Sorry I took such a long hiatus but seriously my recipes were not really cutting it for me. So I better see you every Thursday in the kitch 🙂
Today’s recipe is one that is super quick, easy, and tasty to make for on the go breakfast for back to school! One serving also has 186 cals and 26g of protein! I know. Ridiculousness. Now get on it.
FIESTA MUFFINS
Ingredients:
– 4 slices low sodium turkey
– 2 eggs plus 2 egg whites
– 1⁄4 cup black beans, rinsed and drained
– 1 tablespoon hot sauce
– 1⁄4 cup chopped bell peppers
– 1⁄2 green onion, chopped
– Salt and pepper
TOTAL PER SERVING (2 muffins): $1.04
Directions:
1. Preheat oven to 375 degrees.
2. Spray four large muffin tins with cooking spray and place 1 slice of turkey in each.
3. Whisk together the eggs and whites.
4. Add in the beans, hot sauce, bell peppers and green onion.
5. Pour the mixture into each cup.
6. Bake for 20 minutes, or until set.
Calories per serving: 186
Protein: 26 g
Net Carbs: 5 g
Fat: 6 g
Fiber: 2 g

Honey I don’t eat meat or eggs I’ve been that way for a long time now when making a salad I can’t go out and order one cause I’ll eat onion green pepper pineapple chunks basil lettuce and baby spinach Not al restaurants serve those other veggies A lot of your recipes include avocado egg tomatoes or meat and I don’t eat any of those things Is there not anything that you have that I can get excited about making without it involving the oven so much Just a thought that’s all I fell asleep around 6:00 last night cause I was tired and never had any supper I’m in such a rut in my eating If you have any ideas I’d appreciate it and would love to hear it Thank you

Is this 375 degrees celsius or fahrenheit?
Most probably Fahrenheit. My oven doesn’t even go past 300 deg Celsius.
oh… the eggs inside were still liquid after 20 minutes…. what have I done wrong? :((
If these are made and I want to save them for a later day in the week, how long would they last in the refrigerator??? They are so tasty so I would like to make them ahead of time and eat them for a couple meals throughout the week. 🙂
These are such an awesome idea. What a great idea! Love savory muffins too.
I didn’t have turkey slices, so I tried just making these in greased muffin cups. They tasted so light and fresh and flavorful, they were good enough to dig out of the pan with a spoon (which is what I had to do, since the batter stuck to the cups mercilessly with no turkey!). If anyone has experimented and found something that can be used to replace the turkey, post it here please!

I was thinking to replace turkey with tofu for the same reasons 🙂

Absolutely! As long as it will hold up like turkey, you can use any clean substitute.

Great idea, Cassey! We’re so blessed in this generation to have so many great and healthy recipes, and the whole notion of taking fun but still healthy food to school. It’s like I wish I had that knowledge when I was younger. 🙂 And hot sauce is my must have ingredient for every meal–it’s an addiction, really. 😉
